Our 2026 Board of Directors KRISTEN COX Executive Director Kristen Cox has been a lifelong activist, with a masters in Clinical Psychology, and has led many large and successful volunteer organizations. Her interest in social justice has had her traveling most of the country, trying to help people in difficult predicaments, like survivors of two separate hurricanes, and indigenous people fighting oil pipelines. Her concern for the community has always been apparent in her actions, whether on the frontline or behind the scenes. Through her activism, she determined that alternative systems of supporting the community, especially in disadvantaged demographics, were becoming necessary.  In 2017, she began to work toward creating a worker's cooperative that would benefit any and all in need and that has become Long Beach Community Table. She is grateful to have connected with so many incredible people, which have created a very successful team that truly cares about the dignity and sustainability of the community. Brenda Loughery Treasurer Brenda Loughery is a seasoned communications and public relations strategist with more than 25 years of experience spanning media relations, content development, and strategic advisory. A graduate of New York University with a degree in Journalism & Politics, she has worked across highly regulated industries, including legal cannabis and biopharmaceuticals, guiding complex messaging and stakeholder engagement. A Long Beach resident for the past decade, Brenda is active in community initiatives, including environmental efforts and animal rescue, and also serves on the Advisory Board of the Long Beach Peer Education Community Center (LBPECC). She brings a thoughtful, policy-aware perspective and a strong commitment to service, sustainability, and impactful community engagement. PAM CHOTISWATDI Board President Pam Chotiswatdi, MPH, is a Long Beach-based Community Educator, Death Doula, and advocate with over two decades of experience in public health,  cannabis education, and end-of-life care. She is the co-founder of the Peer Education Community Center (PECC), where she leads programs grounded in harm reduction, life skills, peer support, and community-based education—especially for marginalized populations. Pam serves on the Board of Long Beach Community Table and is a City of Long Beach Commissioner on the Homeless Services Advisory Committee. With 22+ years in Long Beach, her work is rooted in local care, systemic change, and creating accessible, alternative paths for healing and support. MARIA SHAFER Secretary Originally from Cuba, Maria has called Long Beach, California,  home for most of her life. Raised by a strong single mother, she  values hard  work, community, and compassion. She graduated from Cal State University Dominguez Hills with a degree in Small Business Administration, also as a single mother with two sons. Now retired, Maria manages her small business and has the time to volunteer for Long Beach Community Table—an organization that works hard, values community, and practices compassion. Helping to coordinate community events such as monthly crop swaps, garden-building teams and classes, and distribution of fresh food to those in need on behalf of LBCT has been the perfect outlet for Maria. Testimonials Oct. 16th, 2020 Dear Program Director,   l am writing to let you know how very deeply grateful I am for your services. When l called the LBCT Homebound program, l had just found out that, due to the Covid-19 pandemic, We, as Long Beach residents were being forced to shut down my partner’s business and to go into quarantine. I am on full disability and my partner has a micro small business, a barber shop smaller than most studio apartment bathrooms. We didn’t qualify for any assistance with the business because our income was so small. We only received one stimuIus check, for my partner because she claimed me on her taxes, We were in serious trouble! We had no money and no food, and no hope of any income. It was very scary. My disability income is only $900.00 a month while our apartment costs that much a month. I have permanent Iung damage from severe asthma and repeated lung infections, which puts me at high risk for Covid- 19, and my partner is 61 yrs. old with a history of bad lung infections especially during the annuaI coId and flu season. We are both unabIe to work due to the high risk of infection. This Ieft us very vulnerable. We turned to Long Beach Community Table for help in desperation and were SO relieved and grateful that we couId get help through this program, which brings us fresh produce, Canned goods and frozen proteins to our door on Sundays! Without this help we would not have been able to Survive. Thank you so very much. I am so relieved that you have been there for us. We are still in isolation status due to our high risk for infection with the pandemic. We would not have been able to survive without your generosity. Thank you from the bottom of my heart. My need will be continuing as there seems to be no other financial relief in sight. The most recent pandemic relief package has been denied by congress. We are dependent on the kindness of this program. My hope is that the grant money that you need to stay afloat comes through. In the spirit of community, many of our volunteers are also recipients, and vice versa…this is what makes us a true mutual aid organization and not a charity.  We do however, have an executive board that acts in emergency situations.   Our Mission ​ We foster sustainable community to support the well-being, empowerment, and self-determination of food- and housing-insecure residents in the greater Long Beach area with dignity and compassion.   Our Vision ​ We envision LBCT as the platform of a cooperative, mutual-aid society where everyone involved gives, receives, and takes care of each other to first meet basic needs, then to collectively create greater self-sufficiency for individuals, families, and communities. ​ ​ What We Do   Long Beach Community Table's primary programs:   Source and distribute organic produce, nutritious food, and basic essentials; Build and cultivate urban vegetable gardens around the city; and Provide education and resources to enable self-sufficiency.   Each week, our dedicated volunteer team distributes 40,000+ lbs. of groceries and fresh produce, as well as clothing and toiletries, to more than 6,000 homeless individuals, low-income families, students, seniors, veterans, and homebound people with disabilities or medical conditions, on a free or nominal donation basis. Since the COVID-19 pandemic began, we have expanded our resources to meet the significantly increased needs of struggling area residents.   LBCT is one spoke of an interconnected web of agencies addressing food insecurity in the Long Beach/Los Angeles region. In order to achieve our mission, we collaborate with numerous local organizations , farmers’ markets, urban gardens, and businesses who contribute generous food, hygiene, financial, and other in-kind donations.   In addition, our team builds, plants, maintains, and harvests numerous urban gardens on private property throughout the City that provide us with fresh, organically grown produce for our programs, as well as for the hosts.
